Carol Anne (Seibert) Castillo, 38, passed away on August 12, 2023 at OSF St. Francis Medical Center, Peoria.

Carol was born on September 21, 1984 in Galesburg, to Charles J. Seibert and Kathy Jackson. She graduated with honors from Galesburg High School. Later she graduated Magna Cum Laude from Southern New Hampshire University with a BA in Psychology, where she was also on the Dean’s List.

Shortly after high school, she married Jose Luis Castillo and together they had 2 sons, Malachi “Chi” Vincent and Luis “Paco” Francisco Vidal Castillo. Carol worked at McDonalds on Main St, Galesburg where she became manager, and later worked at Knoxville McDonalds. She last worked at Bridgeway as an assessment counselor.

Survivors include her father, Galesburg; her dad, Paul Jackson, Galesburg; her two sons of Galesburg; brother, Sean Seibert, Tempe, AZ; sister, Nichole Seibert, Galesburg; nieces, Tracy (Richard Ferguson) Brady and Alexanderia (Dylan Fuller) Brady, both of Galesburg; 9 cousins, 18 second cousins, 4 third cousins; and was going to be a great aunt to a baby boy. She was preceded in death by her mother.

Visitation will be held Saturday, August 19th from 1:00 – 3:00 p.m. at Watson Thomas Funeral Home, Galesburg. Cremation will be accorded. Memorials may be made to Malachi or Paco Castillo. Online expressions of sympathy may be sent to the family at www.watsonthomas.com.
