A new food truck offering Colombian cuisine has opened in Monmouth. Vamos Food Truck, owned and operated by Melinda and Nicholas Gomez, recently moved to the area from Tampa Bay, Florida. The couple started the business several years ago in Florida before deciding to relocate to Illinois. Melinda Murray Gomez, originally from Canton, said the move was motivated by a desire to be closer to family. They brought the food truck with them and have since started serving the Monmouth community. Melinda shares what you can expect on the menu.
