Chase Gibb Continues Renovations on New Buffalo 67 Restaurant in Monmouth

The new Buffalo 67 restaurant in Monmouth is continuing improvements and with a potential opening date of November 1st.  Owner Chase Gibb says he has hired a chef who is developing the menu that will feature traditional and popular tavern meals as well as what he calls his Maple City menu.

“We will have a traditional tavern menu and what we have done is we have taken our most popular items from the tavern menu and we brought them over here. So you are not going to see the exact same menu that we have at the Buffalo or at Buffalo 61. On the flip side of that, we have what I am calling our Maple City Menu. What that is, is that is our chef that we have brought in. He had some really neat ideas and concepts. A lot of steak. All the steak that we will be doing we are going to do sous vide, so that will be something different to the area. I don’t know if there is anybody around doing sous vide on steaks right now or not,” Gibb shares.

The menu will also include bison choices as well as prime rib on the weekends and appetizers and pastas.  Gibb says they have developed a 12-inch tall Big Red sandwich that incorporates the Fighting Scots colors in honor of Monmouth College.  General Manager Nate Dempsey says there will be two dining experiences as well.  One side will be a casual sports bar concept while others can enjoy a more formal dining experience on the other side.  Buffalo 67 is located where the “Barnstormer” building is located in Monmouth.  Gibb owns the Buffalo Tavern in Burlington, Buffalo 61 in Ft. Madison, Coal Haus 337 in Burlington as well as Fork Catering.
