Carol Dean “Mimi” West, 91, of Abingdon, Illinois, died at Allure of Knox County, Galesburg, Illinois on October 16, 2025.

Carol was born April 24, 1934 in Commerce, Georgia, the daughter of Thomas Newman and C. Lucille (Self) Garner. At the age of 8, the family moved to Greenville, South Carolina, where she continued her schooling, graduating from Parker High School.

Carol married Omer “Gene” West on January 3, 1953 in Greenville. He preceded her in death on December 11, 1992. Carol is survived by one son, Loren (Kathy Gabbert) West of Abingdon; one daughter, Julie (Jeff) Shipplett of Abingdon; her grandchildren, Brittany Shipplett, Vanessa (Brandon Kaplan) Shipplett, Roger West, Jr., and Nick West; two great grandchildren, Kiara and Milo; and a special nephew, Luke Cason. Along with her husband and parents, Carol was preceded in death by one son, Roger on May 19, 2003; three sisters and one brother.

Carol worked various jobs before dedicating her time to raising her family. She loved gardening, watching soap operas and enjoying a good cup of coffee. She also loved sunflowers, cardinals, and collected Mickey Mouse items. Carol was an excellent cook and brought southern charm to her dishes. Her homemade peanut butter frosting was the best! She loved taking care of her family, helping with her grandkids and great grandkids. She was always just a call away for advice or just someone to talk to. She will be greatly missed by everyone who knew and loved her.

Private graveside services will be held at Abingdon Cemetery, Abingdon, Illinois. Pastor Danny Hunt will officiate. A public celebration of life will be at the Harry E. Wiles American Legion Post 381, 546 IL-41, Abingdon, Illinois on November 2, 2025 from 1:00 p.m. to 3:00 p.m. Arrangements have been entrusted to Watson Thomas Funeral Home and Crematory, Galesburg.
