It’s Porktober! October is National Pork Month, and local producers are celebrating one of America’s favorite meats while highlighting the people and farms behind it. Illinois Pork Association Director of Marketing Mikayla Schaefer says all month long, they’ll be sharing the stories of Illinois pig farmers, along with cooking ideas and ways to incorporate pork into your meals.

“You could add a simple pork sausage to go with your pancakes,” says Schaefer. “During the holidays, you can throw bacon with Brussels sprouts, or you can throw, you know, a touch of tenderloin into your salad, and just add nutritious value. And I don’t think people know, too, there’s certain cuts that are heart-healthy. And as we work with national and the dietitians, there are such great health aspects to pork and all the different vitamins and just all that it can do to fuel your body.”

Schaefer adds that ILPork.com has recipes that incorporate pork, giving people plenty of ideas to try throughout Porktober.
